New Delhi: With the onset of winter, if the name of one sweet comes first on people’s lips, it is carrot halwa. Filled with the aroma of ghee, cream of milk and the sweet aroma of cardamom, this sweet finds a special place in the cold season. A bowl of hot carrot halwa not only gives taste but also doubles the fun of winter.

People especially remember the taste of carrot halwa served at weddings for a long time. Not too sweet, not too dry, light layer of ghee on top and royal taste in every bite is its identity. Often people think that only confectioners can make such halwa, but the truth is that by adopting the right method, the same wedding taste can be easily prepared at home.

The most important thing is to choose the right carrot.

To make wedding-style carrot halwa, first take 4 kg of fresh and juicy carrots. Wash them thoroughly, peel them and then grate them finely. The finer the carrots are grated, the softer and smoother the halwa will be.

Right way to fry carrots in ghee

Now place a big kadai or pan on the gas and add one serving spoon of ghee in it. As soon as the ghee becomes hot, add grated carrots. Fry the carrots on medium flame while stirring continuously, so that they do not burn and get cooked well. This step prepares the base of halwa.

Add milk to give creamy texture

When the carrots become slightly soft, add half liter full cream milk to it. Mix well and continue cooking on medium flame. The milk will slowly absorb into the carrots and give the halwa a creamy and rich texture.

Real taste will come from sugar and cardamom

Now add 4 cups of sugar in it. As soon as sugar is added, the pudding will become a little loose, so increase the flame and keep stirring continuously. After this add cardamom powder, which will increase both the aroma and taste of the halwa.

Make Halwa Shahi by adding Mawa

Now take 1 kg mawa and grate it. Add half of it to the halwa and mix well. Fry the halwa for some more time, so that the mawa gets mixed completely. After this, add 2 to 3 serving spoons more ghee and cook the halwa until it starts looking thick and shiny.

Dry fruits will provide perfect crunch

Now prepare dry fruits. First dry roast the melon seeds in a separate pan. Then add some ghee in the same pan and fry the remaining dry fruits lightly. Crush them lightly and add them to the halwa and mix well.

Give final touch on low flame

Now reduce the flame of the gas and let the halwa cook for some more time. This will allow all the flavors to mix together well. When the halwa is ready, take it out in a tray and add the remaining grated mawa on top. Mix by mashing lightly.

Serve hot and enjoy winters

Serve the prepared carrot halwa like a wedding in hot bowls and enjoy it with the family. There is hardly any better sweet than this in the winter season.
