In this episode, famous chef Kunal Kapoor has shared the recipe of a traditional and very nutritious winter drink, which is called Punjabi Doodhi or Dudhi. This drink, rich in milk and nutrients, not only gives strength to the body in winter but is also considered beneficial for overall health.
What is Punjabi Doodhi or Dudhi?
Punjabi Doodhi, also known as Dudhi, is a traditional medicinal drink from Punjab. It is prepared by mixing dry fruits, seeds and special spices in hot milk. It is believed that its consumption in winter keeps the body warm from inside and removes weakness. This drink has been used traditionally for a long time to increase strength.

Chef Kunal Kapoor told in his Instagram video that Doodhdi was made in his house every winter. He said that this drink gives deep warmth to the body and is so powerful that it has been given even to wrestlers. Kunal Kapoor described it as a special recipe related to childhood memories.

Method to make Doodhdi
According to Chef Kunal Kapoor, to make Doodhdi, first soak couscous, cashew nuts, almonds and melon seeds in water for about an hour. After this, grind all these in a blender along with makhanas and milk. If you want, you can make it slightly coarse or completely smooth.
Now heat 1–2 spoons of ghee in a pan and add the prepared paste to it and fry on low flame. Fry the paste until its color turns light brown. Keep in mind that the better it is roasted, the better the taste will be. After frying, cool the mixture. This mixture can also be stored in the refrigerator for one month.
In the next step, boil the milk and add the prepared milk mixture into it. Add cardamom powder and sugar to taste. Bring to a boil and your winter special Punjabi Doodhi is ready.
Benefits of drinking Punjabi Doodhi
According to Ayurveda expert Kiran Gupta, Punjabi Doodhi is a very beneficial drink for winters. The dry fruits, couscous and milk present in it provide energy and strength to the body. This drink helps in increasing immunity and prevents weakness in cold weather. However, due to the fat content in milk, it is high in calories, hence it should be consumed in limited quantity only.
