This is a dish which may seem a bit difficult to make, but with the recipe we are going to tell you today, you can easily make hotel-like Blueberry Cheesecake at home, which will win everyone’s heart.

Required Materials:

For the base (crust):

  • Biscuits (digestive or any Mari biscuits): 1 cup (finely crushed)
  • Butter (melted): 4 tsp

For the filling (cheesecake mix):

  • Cream Cheese (Softened): 250 grams (about 1 cup)
  • Sugar: 1/2 cup
  • Heavy Cream or Whipping Cream: 1/2 cup
  • Vanilla Extract: 1/2 tsp
  • Eggs: 2 (large size)
  • Lemon juice: 1 tsp (not essential, but will add flavor)

For the Blueberry Topping:

  • Fresh or frozen blueberries: 1.5 cups
  • Sugar: 2-3 teaspoons (as per taste)
  • Water: 2 spoons
  • Cornflour: 1/2 tsp

Method of making:

Step 1: Prepare the Base (Crust)
First of all, heat the oven at 180°C. Now take a round baking pan (about 8 inches) and put butter paper on its bottom. Mix biscuit crumbs and melted butter well in a bowl. Spread this mixture by pressing it well in the bottom of the baking pan. Bake it in the oven for 10 minutes, then take it out and let it cool.

Step 2: Make the Cheesecake Mixture
Combine softened cream cheese and sugar in a large bowl and beat until smooth and creamy. Then add heavy cream and vanilla extract to it. Now add eggs one by one and after adding each egg, beat the mixture lightly (do not beat too much). If you want, you can also add lemon juice at this time, it will further enhance the taste.

Step 3: Baking and Cooling
Pour the cheesecake mixture into the pan over the prepared biscuit base and spread it well. Now increase the oven temperature to 150°C. Place the cheesecake pan in a large baking tray and pour hot water into the large baking tray so that it comes half way up the sides of the cheesecake pan (this will prevent the cheesecake from curdling and will make it creamier). Bake the cheesecake for 50 to 60 minutes. You have to see that the edges are set but the center remains slightly soft.
When baked, turn off the oven and let the cheesecake remain inside the oven for another 1 hour. Then take it out and let it cool completely. After it cools down, keep it in the refrigerator for at least 4-6 hours or overnight so that it sets well.

Step 4: Prepare the Blueberry Topping
Put blueberries, sugar and water in a small saucepan and cook on low flame. When the blueberries start softening and releasing some juice, dissolve the cornflour in a little water and add it. Cook the mixture until it becomes thick. Let it cool.

Step 5: Time to Serve
