How to make Punjabi style Sarson ka Saag?
Sarson Ka Saag: Making Sarson Ka Saag in Punjabi Dhaba style is not very difficult. Let us first know about the ingredients used to make Sarson Ka Saag. Let us tell you that to make Sarson Ka Saag, you need 500 grams of mustard greens, 250 grams of spinach, 150 grams of bathua, 50 grams of fenugreek leaves, one finely chopped onion, 2 finely chopped tomatoes, 6 finely chopped garlic cloves, grated one inch piece of ginger, 2 chopped green chillies, 2 tablespoons of corn flour, 2 tablespoons of butter or ghee, salt and Water will be needed.
First step- Wash and clean mustard greens, spinach, bathua and fenugreek. After this, roughly chop the greens and boil them in a vessel with water, salt and green chillies.
Second step- Cover the vessel and cook for about 20 to 25 minutes so that the greens become soft. When the greens cool down, you have to mash them and prepare a thick paste.
Third step- Heat ghee or butter in a pan and fry garlic, ginger and onion. When this mixture becomes golden, then you have to add tomato puree to it and cook till the oil separates.
Fourth step- Mix the vegetable paste with this roasted mixture. If you want to thicken the saag, you can add corn flour.
Fifth Step- You have to cook the greens on low flame while stirring for about 20 minutes. If you want to dilute the greens, you can use a little water.
Sixth Step- For tempering, heat a big spoon of ghee or butter in a pan. Now add 4 finely chopped garlic cloves and fry until golden.
Seventh Step- Finally, add a small spoon of red chili powder in the tempering. Pour this tempering on the saag and your sarson ka saag is ready to serve.
