New Delhi: Having a picnic outside with home-cooked food is a pleasant experience. At the start of a new year, it reminds us to stop, enjoy the sunshine, and spend time with loved ones.

Renowned chef Sanjeev Kapoor believes that the secret to a successful picnic is simple. Food that can be easily transported and tastes delicious even without heating. With that in mind, he’s sharing some easy snacks that are perfect for parks, gardens or short trips.

Chicken Salami Sandwich

The Chicken Salami Sandwich is a filling and easy-to-carry option. Spread butter, mayonnaise and mustard on soft white bread and top with rocket lettuce, chicken salami, cheese, spicy salami, onion rings and microgreens. Wrap it tightly in parchment paper and refrigerate for an hour. Cut before eating and it will make a great picnic snack.

Herbed Paneer Sandwich

For vegetarians, the Herbed Paneer Sandwich is a great option. Break the cheese and mix it with mint, coriander, lemon juice, fried garlic, olive oil, salt and pepper to prepare a delicious mixture. Spread butter and sauce on brown bread, then layer it with lettuce, tomato, cheese mixture, onion, cucumber and cheese. Wrapped in parchment and cooled, these sandwiches are fresh and easy to eat.


Puffed Rice Energy Bar

If you want something sweet and energizing, puffed rice energy bars are a great option. Made with puffed rice, jaggery, ghee, peanut butter, jam and roasted peanuts, these bars are quick to prepare and ideal for snacking out. Mix all the ingredients, press the hot paste into a tray, cut into bars and dip in melted chocolate when it cools. Walnuts and a sprinkling of sea salt add crunch and balance.

Aloo Paratha

Any Indian picnic seems incomplete without Aloo Paratha. Mash the boiled potatoes and add ginger, green chilli, coriander, salt, garam masala and red chilli powder to it. Fill this mixture in balls of whole wheat flour, roll them and cook in ghee till they turn golden. When wrapped in foil, aloo parathas remain soft and delicious. Don’t forget to take it with curd and pickle.


Khaman Dhokla

Another popular dish for picnics is Khaman Dhokla. A soft batter made of gram flour, curd, salt and ginger-chilli paste is steamed. It is then garnished with a tempering of mustard seeds, curry leaves, sesame seeds, green chillies, sugar and water. Garnished with fresh coriander, dhokla is light and easy to pack. With green chutney it becomes a perfect outdoor snack.
