But if you have not tried Carrot Pak, then you have really missed something. This traditional dessert of Chirawa of Rajasthan is a favorite of children and adults alike.
Gajar Pak is made from fresh red carrots, desi ghee, milk and dry fruits. Its specialty is its creamy texture and halwa-like taste, which makes it not only different from halwa but also special from every dessert. According to Chef Bhupendra, this sweet is made from fresh carrots especially in winters and its taste fascinates everyone.
Ingredients required to make Carrot Pak
- 1.5 kg carrots
- 1 cup sugar
- 1 liter milk
- 2 tbsp desi ghee
- 2 tsp green cardamom powder
- 15-20 nuts
- 15-20 almonds
- 250 grams dry milk/mawa
- 2 tbsp sugar (separately)
- Saffron (optional)
Step-by-Step Carrot Pak Recipe
- Prepare Carrots: Wash, peel and grate the carrots.
- Cook Carrots: Add carrots to the pan and cook until slightly soft.
- Mix sugar and milk: Add sugar and let it dissolve, then add 1 liter milk and cook until the milk dries.
- Add ghee and cardamom: Mix 2 spoons of ghee and cardamom powder and fry for some time.
- Prepare the nuts: Chop some cashews and almonds and save them for garnish, grind the rest into powder and mix it with carrots.
- Prepare Mawa Mixture: Heat the mawa in a pan, add some milk and make a thick paste. Add saffron, cardamom and 2 teaspoons sugar to it.
- Carrot Pak Set: Spread carrot pak on a tray covered with butter paper. Top with mawa mixture and remaining nuts.
- Chill in the fridge: When it sets in 1.5–2 hours, cut it and serve it like barfi.
