New Delhi: It is a wonderful experience to enjoy the mild winter sunshine, the aroma spreading in the house and the hot Bathu Kachoris. It is not only delicious in taste, but is also beneficial for health. Due to its hot nature, Bathua strengthens the body from within.

When Bathua is mixed with wheat flour along with spices and transformed into crispy shortbreads, it becomes a favorite winter dish. In this cold season, if you also want to make Halwai style Bathua ki Kachori at home, then here is its simple and proven recipe.

Ingredients required for Bathua Kachori

  • 250 grams bathua

  • 2 cups wheat flour

  • 2 tbsp semolina

  • 2 tbsp oil or ghee (for moyan)

  • 1 tbsp ginger-green chilli paste

  • 1/4 teaspoon asafoetida

  • 1/2 teaspoon celery

  • chilli powder

  • coriander powder

  • salt as per taste

How to make Bathua paste

First of all, wash the bathua leaves thoroughly. Then add some water in a pan and boil Bathua leaves for about 5 minutes. Filter the water and let the bathu cool down. When it cools down, add ginger and green chillies and make a fine paste.

dough making method

In a large vessel, add wheat flour, semolina, salt, celery, asafoetida and all the dry spices. Then add 2 spoons of oil or ghee and mix well. Add prepared Bathua paste and knead a stiff dough adding some water as required. Cover the dough and let it rest for 15 minutes.


Process of making crispy shortbread

Make small balls of the rested dough. Apply some oil on your palm and grease the balls and roll them slightly smaller and slightly thicker than the puri. Now heat oil in the pan on medium flame. When the oil is hot, add the kachoris one by one and fry them by pressing gently with a ladle until they become golden and crisp from both sides.

serving method

Serve hot Bathua kachoris with potato curry, boondi raita or coriander-mint chutney. This dish will win over the whole family on a winter morning or lunch.
