Modern incarnation of traditional Undhiyu, make Undhiyu Wraps at home like this, even pizza-burgers will fail
News India Live, Digital Desk: As soon as winter arrives, if anything is discussed the most in Gujarati homes, it is Undhiyu. Lots of green vegetables, papdi, brinjal, sweet potatoes and those fenugreek fists… uff! Just hearing the name makes the mouth water. But, we all know how fussy these days’ children (and sometimes adults too) are about eating “traditional food”. They find bread and vegetables boring and want something fancy like a roll or wrap. So why don’t we give a new and modern twist to our traditional and healthy ‘Undhiyu’? Today we will talk about “Undhiyu Wraps”. This dish is not only the smartest way to feed lots of vegetables to your kids, but it can also become the pride of your lunch box. Why is this ‘wrap’ so special? See, Undhiyu is a ‘health treasure’ in itself. It contains all those vegetables which provide warmth to the body in winter. When you turn it into a ‘wrap’ or ‘roll’, it becomes easy to eat (mess-free) and looks cool. Let’s quickly make Desi Undhiyu Wrap. You don’t need any rocket science to make it. If you have leftover undhiyu from the night before, this can be made in 5 minutes, and even if made fresh, it is not too difficult. What do you need? For the base: Wheat roti, multigrain roti or you can even use market tortilla. Filling: Prepared undhiyu curry. (In this, mash the potatoes, sweet potatoes, papdi and brinjal well so that the wrap does not tear). For flavour: green chutney (for spiciness) and mayonnaise or thick curd (for children). For crunch: finely chopped onion and some sev (bhujiya). Easy way to make: Prepare the base: First of all take a roti. If the roti is fresh then it is great, and if it is left over from the night then lightly roast it on a pan so that it becomes soft. Apply chutney: Apply your favorite chutney on one side of the roti. If you are making it for children, you can apply some mayonnaise or ketchup. Decorate the Undhiyu: Now spread the Undhiyu vegetable evenly in the middle of the roti. Keep in mind that the vegetable should not be too wet, otherwise the wrap will disintegrate while eating. Desi Tadka: Add finely chopped onion over it and if you want, you can also grate some cheese. Children eat everything in the name of cheese. Roll and Grill: Now roll it tightly. Put some butter on a pan and fry this roll until it becomes golden and crisp from both the sides. It’s ready! Cut it in half and serve hot.Tip: If your kids like muthiya (fenugreek pakodas), then break them and put them inside the wrap. Their crunchy taste takes wraps to the next level. So the next time your baby says, “Mummy, I’m not hungry”, serve him this piping hot Undhiyu Wrap. Believe me, not only will the plate be empty, you will also be relieved that the child has eaten something healthy.
