Basant Panchami Special, Bengali Rajbhog Recipe: Festival means something sweet has to be cooked. In Indian homes, it is preferred to make sweets at home instead of bringing them from outside. Now the festival of Basant Panchami is about to come and there is a tradition of making yellow sweets on this day. In such a situation, today we are telling you the easy recipe of Rajbhog, the traditional and delicious sweet of Bengal. You can enjoy the festival by making this sweet very easily at home. So let us know the simple recipe of making Rajbhog.

Material
- Full cream milk – 1 liter
- Lemon juice or vinegar – 2 tbsp
- Cornflour – 1 tsp
- Saffron – 10 to 12 threads (soaked in 2 tbsp lukewarm milk)
- Cardamom powder – half teaspoon
- Pistachios, cashews (finely chopped) – 2 tbsp
- Yellow food color – 1 pinch
- Sugar – 2 cups
- Water – 5 cups
- Cardamom – 2 to 3 (crushed)

Method
- First of all boil the milk. Switch off the gas and add lemon juice into it. When the milk curdles, filter it in a muslin cloth. Wash with cold water and hang for 15 minutes so that all the water drains out.
- Take out the chhena in a plate and mash it well, until it becomes completely smooth. Now add cornflour, cardamom powder, saffron milk, dry fruits and light yellow color to it.
- When the mixture becomes like soft dough, make big balls out of it. Keep in mind that Rajbhog is slightly larger than Rasgullas.
- Put water and sugar in a pan and boil it. Add crushed cardamom to it and keep the syrup thin.
- Add prepared Rajbhog in boiling syrup. Cover and cook on medium flame for 15 to 20 minutes. You can sprinkle some water in between so that the syrup does not become too thick.
- Turn off the gas and let the Rajbhog cool down in the syrup. Garnish with pistachios and cashews on top.
Now the delicious Rajbhog is ready. On Basant Panchami, offer it as an offering to Mother Saraswati.
