for flour
- 2 cups flour
- 3-4 tbsp oil or ghee
- salt as per taste
- water (for kneading)
for stuffing
- 3-4 boiled potatoes (mashed)
- 1/2 cup green peas (boiled)
- 1 tsp ginger-green chilli paste
- 1/2 tsp cumin
- 1/2 tsp coriander powder
- 1/2 tsp garam masala
- 1/2 tsp red chilli powder
- salt as per taste
- 1 tbsp green coriander (finely chopped)
- oil for frying
How to make Potli Samosa
prepare the dough
Add flour, salt and ghee in a bowl and mix well. Then add water little by little and knead a stiff dough. Cover it and keep it for 15-20 minutes, so that the dough gets set.
Prepare Spicy Stuffing
Heat some oil in a pan. Add cumin seeds to it, then add ginger-green chilli paste and fry. Now add boiled potatoes and peas. Add coriander powder, red chilli, garam masala and salt and mix well. Finally add green coriander and turn off the gas.

Make small balls of dough and roll them like puri. Place the prepared stuffing in the center and lift the edges from all four sides to give it a potli-like shape. Close it by pressing lightly on the top so that it does not open while frying.
frying process
Heat oil in a pan. Add potli samosas and fry them on medium flame till they become golden and crisp. When the samosas get nicely browned, take them out and keep them on tissue paper.
serving method
Serve Potli Samosa hot with green chutney, sweet tamarind chutney or tomato sauce. If you want, you can enhance the taste by sprinkling some chaat masala on top.
