Ingredients required to make Rabdi Malpua

To make this wonderful dessert you will need:

  • full cream milk
  • Sugar
  • Saffron
  • green cardamom powder
  • Maida or wheat flour
  • Semolina
  • sugar powder
  • Ghee or oil (for frying)
  • Water
  • chopped pistachios or almonds for decoration

Prepare thick and tasty Rabdi like this

  1. First of all, boil the milk on low flame in a heavy bottomed vessel.
  2. Keep stirring the milk continuously so that it does not stick to the bottom.
  3. When one-fourth of the milk remains, add sugar, saffron and cardamom powder to it.
  4. Cook it well and prepare thick rabri and keep it aside.

Easy method of making Malpua

  1. Mix maida or flour, semolina and sugar powder in a bowl.
  2. Prepare a smooth and lump-free batter by adding water or milk little by little.
  3. Keep the batter covered for 10-15 minutes.
  4. Heat ghee in a pan and add a ladle of batter and spread it in a round shape.
  5. Fry on medium flame until golden and crisp on both sides.

Syrup and final preparation

  1. Make two strings of syrup by mixing water and sugar in a vessel.
  2. Add some saffron to it to enhance the taste.
  3. When the syrup cools down slightly, dip the fried Malpua in it for 2-3 minutes.
  4. Now place the malpuas in a serving plate and pour thick rabri on top.
  5. Garnish with chopped pistachios or almonds and serve cold or lukewarm.
