milk 1 liter
Almonds – 10-12
Saffron – 10-12 threads
Sugar – as per taste
Cardamom powder – half teaspoon
Cashews/Pistachios – to garnish

What is the method to make Holi Special Saffron-Almond Milk?

First of all, soak the almonds in water overnight or for at least 4–5 hours. After soaking, remove its peel easily. Now put the peeled almonds in the mixer, add 2-3 spoons of milk in it and make a fine paste.
Heat milk in a deep vessel and keep it on low flame. Let the milk boil slowly. When the milk comes to a boil, reduce the flame and let the milk cook for 5-7 minutes. Keep stirring it in between.
Now slowly add the prepared almond paste into the boiling milk. Keep stirring it continuously so that the paste dissolves well in the milk. Due to this, the color of the milk will become light creamy and the aroma will start coming.
Now soak the saffron threads in 1-2 spoons of lukewarm milk for 5 minutes. Then put saffron in the vessel with milk. Now let the milk cook for 2-3 more minutes.
Then add sugar to it and mix well. After this add cardamom powder and cook it on low flame for 4-5 more minutes.
Now add chopped cashews and pistachios over it and cook for 2 minutes and turn off the flame.
