Homemade Rasmalai: Make soft and tasty Rasmalai at home

Ingredients Required
- 1 liter full cream milk
- 2–3 teaspoons lemon juice or vinegar
- 1 cup sugar
- 4 cups water
- 1 liter full cream milk
- 4–5 teaspoon sugar
- 4–5 cardamom (ground)
- some saffron threads
- chopped pistachios and almonds
Homemade Rasmalai Preparation
- First of all, boil milk in a vessel. When the milk starts boiling, turn off the gas and slowly add lemon juice. The milk will curdle and the cheese will separate.
- Now filter it in a muslin cloth and wash it with cold water to remove the sourness of the lemon. Tie the cloth and hang it for 30 minutes so that the excess water drains out.
- Now take the cheese in a plate and mash it well for 8-10 minutes, so that it becomes completely soft. Make small pills.
- Boil water and sugar in a vessel. When the syrup starts boiling, add the cheese balls in it. Cover and cook on high flame for 10-12 minutes. The balls will swell and double in size.
- In another vessel, cook the milk on low flame until it thickens. Keep stirring occasionally so that the milk does not stick to the bottom. When the milk is reduced to half, add sugar, cardamom powder and saffron in it.
- The milk should become slightly thick and creamy. Turn off the gas and let it cool.
- Press the prepared rasgullas lightly to remove excess syrup. Now put them in cold rabri.
- Add chopped pistachios and almonds on top and keep it in the fridge for 3-4 hours.
Serving Tips
- Always serve Rasmalai cold.
- Adding a little saffron milk on top enhances the color and taste.
- Prepare it before the guests arrive and keep it in the refrigerator.

Tips for Perfect Rasmalai
- It is very important to mash the cheese well, only then Rasmalai It will become soft.
- While cooking in syrup, make sure to cover it with a lid.
- Cook the milk on low flame so that the taste of Rabdi gets better.
- Use only fresh full cream milk.
