Authentic vada pav is a combination of spicy potato vada with crispy gram flour coating, garlic-dry chutney, green chili chutney and soft pav. Material

For potato wedges

  • Boiled potatoes – 4 to 5 medium sized
  • Green Chillies – 2 to 3 (finely chopped)
  • Garlic – 5 to 6 cloves (crushed)
  • Ginger – 1 small piece (crushed)
  • Mustard – 1 tsp
  • Asafoetida – a pinch
  • Turmeric – ½ tsp
  • Curry leaves – 8 to 10 leaves
  • Salt – as per taste
  • Coriander – finely chopped
  • Oil – for frying

Gram flour

  • Gram flour – 1 cup
  • Turmeric – pinch
  • Salt – as per taste
  • Baking soda – pinch
  • Water – as required
  • Salt – as per taste

other materials

  • Pav for Vada Pav – As required
  • Mint Chutney
  • Garlic Chutney
  • Oil for frying

  • Heat some oil in a pan and add mustard seeds. When it crackles, add asafoetida, curry leaves, green chilli paste, ginger-garlic and saute.
  • Then add turmeric and immediately mash the boiled potatoes with your hands and mix it. Add salt and coriander and mix well. Allow this mixture to cool and then make balls out of it.
  • Take gram flour in a bowl. Add turmeric, salt and a pinch of soda to it and make a thick but runny dough by adding water.
  • Heat oil in a pan. Dip potato balls in gram flour and fry on medium flame until golden and crispy.
  • To make garlic dry chutney, grind the garlic, peanuts, salt and lime in a mixer.
  • Cut the bread and apply garlic chutney, mint chutney on it. Place the hot vada inside and press lightly.
  • Serve hot vada pav with fried green chillies.
