News India Live, Digital Desk: After eating Gujiya, Pakora and Chaat on the occasion of Holi, one often starts feeling heaviness in the stomach. In such a situation, Kanji Vada works as a natural digestive aid. Its specialty is its sour-tart water, which is fermented with the help of mustard seeds (yellow mustard).1. Method to prepare spicy Kanji: Kanji takes 2 to 3 days to prepare, so it should be prepared before Holi. Ingredients: 2 liters of water (boiled and cooled), 2 tablespoons of yellow or black mustard seeds (coarsely ground), 1 teaspoon of black salt, 1 teaspoon of plain salt, half teaspoon of red chili powder, a pinch of asafoetida and a little turmeric. Method of preparation: In a glass jar or earthen jar. Fill water in the vessel. Add mustard seeds, salt, chilli, turmeric and asafoetida and mix well. Tie the mouth of the jar with a muslin cloth and keep it in the sun or in a warm place for 2-3 days. When the water turns sour, then understand that your Kanji is ready. 2. How to make soft and spongy vadasIngredients: 1 cup moong dal (soaked), oil for frying, a pinch of asafoetida and salt. Method of preparation: Grind the soaked moong dal coarsely without or with very little water. Pulse the dal well for 5-7 minutes until it becomes light and fluffy. (Check by putting it in water, if the dal starts floating then the batter is ready). Fry small vadas in hot oil. After frying, put the vadas directly in lukewarm salt water for 10-15 minutes. 3. Serving and Smoky Flavor (Dhungar Technique) Squeeze the vadas out of the water and put them in the prepared Kanji water. Pro Tip (Dhungar): For the real Rajasthani taste, place a burning coal in a small bowl in the middle of the Kanji jar. Put some ghee and asafoetida on the coals and cover the jar for 5 minutes. This smoky flavor will increase the taste of kanji 10 times. Why is it important for health?
