Tips to make soft and spongy Dahi Bhalla
soft Dahi Bhalla To make this, first wash the urad dal thoroughly and soak it in water for 6-7 hours. Due to this the pulses swell and become soft.
Then grind it well in the mixer without adding water. Add light salt and baking soda and mix. Beat the batter so that it remains foamy.
Now heat oil in the pan. Now add small balls by hand and fry on medium flame till they turn golden. Do not press the bhallas too hard while frying, otherwise they will become hard.
Soak the fried bhallas in cold water for 10 minutes. Because this is the most important step. This will make them more soft and spongy. Then gently squeeze them and remove the water.
Beat the curd well so that it becomes smooth and creamy. Add some sugar to it. Put the beaten curd in a bowl.
