Material

for vada
Washed Moong Dal-1 cup
Asafoetida-1/4 tsp
Salt-1/2 tsp
oil for frying

for kanji

Water-4 cups (boiled and cooled)
Red chilli powder-1 tsp
Salt – as per taste
Yellow mustard-1 tablespoon (coarsely ground)
Turmeric-1/4 tsp

Method

  1. Soak moong dal for 4–5 hours or overnight. Drain the water and grind the lentils finely. Add salt and asafoetida to the paste and beat well (beating makes the vadas lighter).
  2. Heat oil in a pan and fry small vadas. Soak the fried vadas in lukewarm water for 10-15 minutes, then press lightly and take out the water.
  3. Take water in a clean glass or earthen vessel. Add ground mustard, turmeric, red chilli and salt to it and mix well. Now put vadas in it.
  4. Cover the vessel and keep it in the sun for 2–3 days. Keep stirring with a clean spoon once a day. After 2–3 days, the Kanji will develop a slight sourness – this is its real taste.

serving method

Take out the cooled Kanji Vada in a bowl. You can sprinkle some roasted cumin powder or black salt on top. Serve with Gujiya and Dahi Vada on Holi.
