To make healthy gujiya, you will need 1 cup of wheat flour. You can also add half a cup of almond flour or oat flour. To knead the dough, you will need lukewarm water and 2 to 2.5 tablespoons of pure ghee.

Ingredients for Gujiya Filling
If you want to use mawa, you can use as per your requirement along with half a cup of semolina. You will also need 2 teaspoons finely chopped almonds, 2 teaspoons each of finely chopped pistachios and cashews, 1 teaspoon green cardamom powder and 3 tablespoons dry coconut. To sweeten the gujiya, use date powder instead of sugar, or you can also use dates.

Healthy Gujiya Recipe
First, add ghee to the flour and knead it well with hands until it becomes smooth.
After this, knead a dough of normal texture with lukewarm water. Cover it with a wet muslin cloth.
To prepare the filling, first fry the semolina in a little ghee until it turns golden brown.
Take out the semolina in a plate and in the same pan fry the mawa (pork flour) on medium-low flame while stirring continuously.
When the flour cools down, add semolina to it. Add all the dry fruits, cardamom powder and dates powder.
If date powder is not available, take out the date seeds and grind them in a grinder, then add them to the filling. With this the filling of Gujiya will be ready.

Now remove the cloth from the dough and make small balls of it and fill the filling in it. Keep in mind that while making Gujiya, keep it covered so that it does not become crispy.
Seal all the Gujiyas with a thick batter of flour and water so that there is no chance of the edges opening while frying.
When all the Gujiyas are ready, add oil in a pan and fry them on medium flame till they turn golden. Now you can fry these Gujiyas in the air fryer by applying light oil at 180 degree centigrade for 10 to 15 minutes.
