News India Live, Digital Desk: Paniyaram (also known as Appe) is usually made with rice batter, but the use of moong dal makes it even more nutritious. This is a great option for kids’ tiffin and for working professionals. Ingredients: Moong dal: 1 cup (soaked) Ginger and green chillies: finely chopped Curd: 2 tbsp Semolina (Rava): 2 tbsp (for binding) For tempering: Mustard seeds, curry leaves and asafoetida Vegetables: Finely chopped onion, capsicum and carrot (optional) Eno or baking powder Soda: a pinch Salt: as per taste Oil: for cooking Method of preparation (Step-by-Step Recipe) Step 1: Prepare the paste First of all, grind soaked moong dal with ginger and green chillies in a mixer and make a thick and smooth paste. Keep in mind that while grinding, use minimum water. Step 2: Prepare the mixture. Now take out this paste in a bowl. Add curd, semolina, chopped vegetables and salt to it and mix well. Let it set for 10 minutes so that the semolina swells. Step 3: Add tempering. Heat oil in a small pan. Add mustard seeds, asafoetida and curry leaves and crackle. Add this tempering to the moong dal batter. This will double the taste of Paniyaram. Step 4: Use of Paniyaram Maker Now keep the Appe Paniyaram Maker (Appe Pan) on low flame and apply little oil in its chambers. Add eno to the batter, mix it and immediately fill it in the molds with the help of a spoon. Step 5: Cook from both the sides, cover it and cook on low flame for 2-3 minutes. When the lower surface becomes golden and crisp, turn them and cook from the other side also by applying oil. Serving Suggestion: You can serve ready hot Moong Dal Paniyaram with coconut chutney, peanut chutney or spicy green coriander chutney. It also tastes great as an evening snack with tea.
