Ingredients for Marinating:
Desi Chicken: 2 kg (medium pieces)
Ginger-Garlic Paste: 2 teaspoons
Dry Spices: Coriander Powder (2 teaspoons), Kashmiri Red Chili (2 teaspoons), Turmeric (1 teaspoon), Garam Masala (1 teaspoon)
Lemon Juice: 1 tablespoon
Salt: 1 teaspoon
For Tempering and Gravy:
Oil: 6 tablespoons (use mustard oil only)
Whole Spices: Cumin seeds, 3-4 cloves, black pepper, cinnamon, 2 mace, 2 bay leaves
Vegetables: 1 cup finely chopped onion, 1 cup tomato, 3-4 green chilies, coriander leaves
Secret Touch: 1 teaspoon sugar (for color and balance)
Step-by-Step Recipe
Marinating is the most important step
Wash and dry the chicken. Now, in a large bowl, combine the chicken with ginger-garlic paste, all the dry spices, lemon juice, and salt. Let it marinate for at least 30 minutes. This will allow the spices to penetrate the chicken.
Whole Spice Tempering
Lightly crush the cloves, cinnamon, black pepper, and mace (this enhances the aroma). Heat mustard oil in a pan. When it begins to smoke, add the cumin seeds, ground spices, and bay leaves.
Onion Roasting
Add the onions along with salt and a little sugar. Adding sugar helps the onions caramelize faster and deepens the gravy. Saute until the onions turn golden brown.
Chicken and Spice Combination
Add the marinated chicken and sauté over high heat for 10 minutes. Then, add the tomatoes and green chilies and cook for another 2-3 minutes.
The Magic of Slow Heat
Add 1 cup of hot water (do not add cold water, as this will stop the cooking process). Cover and simmer for 40-45 minutes. Since this is desi chicken, it takes a little longer to cook. When the chicken starts leaving the bones and the gravy releases oil, your dish is ready!
Desi Chicken vs. Broiler Chicken: The recipe states 40-45 minutes, which is ideal for ‘desi chicken’ as its meat is firmer. If you’re making regular (broiler) chicken, it will cook in 15-20 minutes.
Mustard Oil: Mustard oil is the best for a dhaba flavour; it’s important to heat it thoroughly to remove any rawness.
