Bangalore’s famous Masala Puri, found in the bustling roadside carts and evening stalls across the city, is a comforting snack with a delicious combination of crushed puris, ragda gravy, topped with crunchy, tangy and fresh ingredients. Bangalore-style Masala Puri recipe
Ingredients
For the ragda
- 1 cup dried white peas (soaked overnight)
- 1 onion, finely chopped
- 1 tomato, finely chopped
- 1 green chilli, chopped
- 1 tsp ginger-garlic paste
- ½ tsp turmeric powder
- 1 tsp red chilli powder
- 1 tsp coriander powder
- ½ tsp garam masala
- Salt to taste
- 1 tbsp oil
- 2 cups water
- Handful of coriander leaves
For assembling the chaat
- 20–25 Puri (golgappa puris), lightly crushed
- 1 onion, finely chopped
- 1 tomato, finely chopped
- 2 tbsp Tamarind chutney
- 2 tbsp Green chutney
- ½ cup Sev
- Coriander leaves for garnish
- Lemon wedges
How to make:
- Drain the soaked white peas and pressure cook them with salt and water for 3–4 whistles.
- Heat oil in a pan.
- Add chopped onions and sauté until slightly golden.
- Then add ginger-garlic paste and green chilli.
- Add chopped tomatoes and cook until soft.
- Mix turmeric, red chilli powder, coriander powder and salt.
- Cook until the oil begins to separate from the masala.
- Add the cooked white peas along with some cooking water.
- Mash a few peas lightly to thicken the gravy and simmer for 8–10 minutes.
- Add garam masala and chopped coriander leaves.
- The gravy should be medium-thick and slightly spicy, as it forms the base flavour of the dish.
