Irish Soda Bread Pudding- Recipe
Ingredients
- 6 cups cubed Irish soda bread (day‑old works best)
- 3 cups half‑and‑half (or whole milk + cream mix)
- 4 large eggs
- ¾ cup granulated sugar
- 1 tsp vanilla extract
- ½ tsp ground cinnamon
- ¼ tsp nutmeg
- ½ cup raisins or currants (optional)
- 2 tbsp butter (for greasing dish)
Method
- Prepare bread
- Cut soda bread into cubes.
- If fresh, toast lightly in the oven for 10 minutes to dry out.
- Make custard
- In a large bowl, whisk eggs, sugar, vanilla, cinnamon, nutmeg, and half‑and‑half until smooth.
- Combine
- Butter a baking dish.
- Add bread cubes and raisins.
- Pour custard over bread, pressing gently so cubes soak up liquid.
- Let sit for 15 minutes.
- Bake
- Preheat oven to 175°C (350°F).
- Bake uncovered for 40–45 minutes until golden and custard is set.
- Serve
- Enjoy warm, topped with whipped cream or a drizzle of Irish whiskey sauce.
Tips
- Use brown sugar instead of white for deeper flavor.
- Add orange zest for brightness.
- Leftovers can be reheated gently in the oven or microwave.
