News India Live, Digital Desk: Sun-dried tomatoes are used in pizza, pasta, sandwiches and salads to double the taste. They are prepared by drying them in the sun due to which their taste becomes more intense.
Ingredients
Tomato: 1-2 kg (ripe and firm tomatoes, like ‘Roma’ or long ones are better).
Salt: As per taste (it helps to absorb moisture).
Dry Herbs (Optional): Oregano or rosemary.
Olive Oil: To store.
Method of preparation (Step-by-Step Process)
Preparation: Wash and dry the tomatoes. Cut them lengthwise into two parts. If the tomatoes are big, cut them into four slices.
Remove seeds: Remove the pulp and seeds from the tomato with a spoon. Due to this, tomatoes dry quickly and do not spoil.
Sprinkle salt: Line a large tray with a clean cloth or baking paper. Place the tomato pieces with the cut side facing upwards and sprinkle some salt on them.
Sun drying: Keep the tray in direct bright sunlight. Cover the top with a thin net or muslin cloth to prevent dust and insects from entering.
Time: let it dry completely 3 to 4 days (Depending on the intensity of sunlight).
Caution: Bring the tray inside after the sun sets in the evening so that the tomatoes do not get wet again due to dew.
Check: When the tomatoes have completely shrunk and feel leathery to the touch (but not sticky), they’re ready.
Storage Tips
Airtight Container: Put the prepared tomatoes in a clean glass jar.
Use of oil: Fill the jar to the top with olive oil. You can also add garlic cloves or chili flakes to it.
Shelf Life: These tomatoes dipped in oil are in the fridge 6 months Do not get spoiled till.
