Choose the right kadai or pan
Use a non-stick pan or a well-seasoned iron pan. Paneer sticks more to a new or damaged pan.
Heat the pan well first
Before adding paneer, heat the pan on medium flame for 1-2 minutes. If you add paneer in a cold pan, it will stick.
use oil properly
Add a little more oil (but not too much) so that the base of the paneer does not stick directly to the pan. The oil should also be well heated.
Do not stir as soon as you add the cheese.
This is the biggest mistake. After adding the cheese, leave it undisturbed for 1-2 minutes, so that a light crust forms from below. Then flip it slowly.

If there is too much moisture in the paneer, then dry it lightly with tissue paper. Too much water also increases the possibility of sticking.
Cornflour or light flour coating
You can apply a very light cornflour coating on the paneer. This creates a thin layer and makes the paneer crisp and non-sticky.
Do not overcook
If fried for too long, the paneer becomes hard and starts sticking. Take it out as soon as it becomes light golden.
