Maharashtra Masala Vangi Bhaat

Material

  • 2 cups rice
  • 2 cups brinjal
  • 1 cup tamarind pulp
  • 4 spoons peanut oil
  • 1 teaspoon mustard seeds
  • half spoon urad dal
  • 1 spoon chana dal
  • 1 cup shredded coconut
  • 2 teaspoon turmeric powder
  • 2 spoons roasted peanuts
  • 2 tsp vangi bhat masala
  • 1 cup mixed vegetables
  • 2 cups water
  • 8-10 curry leaves
  • 1 teaspoon jaggery powder
  • a pinch of asafoetida
  • 2 dried red chillies
  • 1 cup finely chopped coriander
  • salt as per taste

Method

  • To make Vangi Bhaat, first wash the rice thoroughly and soak it for 30 minutes.
  • After this, heat oil in a pan, add mustard seeds, dry red chilli, curry leaves, urad dal, gram dal and asafoetida and prepare tadka.
  • When they crackle well, add mutton, potato, cabbage and brinjal and fry well.
  • Now add salt, turmeric, red chilli powder and keep frying for 10 minutes.
  • After this add soaked rice in it. Now add tamarind pulp to it and fry for 2 minutes.
  • After 2 minutes, add grated coconut and roasted peanut powder and mix well.
  • Now cover it and cook it well. Then after some time add Vangi Bhaat masala purchased from the market.
  • After this, add one cup of water in it, cover it and keep cooking it on low flame till the rice is cooked.
  • When the rice is cooked, add chopped green coriander and serve.
  • Your masala vangi bhaat is ready. You can eat it with chutney, raita and papad.
