News India Live, Digital Desk: ‘Thecha’, which has emerged from the traditional kitchen of Maharashtra, has today become a favorite of the chatori tongues of the entire country. Be it vada pav, bhakri or simple dal-rice, a spoonful of thecha takes the taste level to the next level. Made with a wonderful combination of green chillies, garlic and peanuts, this dish is not only spicy but also increases appetite with its fragrant aroma. The good thing is that it is very easy to make and it does not spoil for weeks. Let us know the method of making thecha in real ‘Kolhapuri’ style. Essential Ingredients: Green chillies: 10-12 (thick and less spicy, cut into pieces after removing the stalk) Garlic cloves: 8-10 (peeled) Peanuts: 2 tbsp (roasted and peeled) Cumin: 1 tsp Salt: as per taste Lemon juice: 1 Teaspoon (for sourness) Oil: 1 tablespoon (mustard or peanut oil) Instant Recipe: Fry chilli and garlic: Heat some oil in an iron pan or pan. Add cumin seeds in it and let it crackle. Now add chopped green chillies and garlic cloves and fry on medium flame until white marks start appearing on the chillies. Add peanuts: When chillies and garlic are roasted well, add roasted peanuts to it and stir for 1 minute. Grind coarsely: Turn off the gas and let the mixture cool slightly. Now to get the real taste, put it in ‘Mortar and Pestle’ instead of mixer. Add salt to it and grind it coarsely. Keep in mind that it should not be made into a very fine paste. Final seasoning: Add lemon juice to the crushed thecha. If you want to keep it longer, you can add some more hot oil on top. Your spicy ‘Mirchi Thecha’ is ready! Tips to store and serve Thecha: You can fill it in a glass jar and keep it comfortably in the refrigerator for 10-15 days. In Maharashtra it is especially served with jowar or bajra bhakri and onions. If you do not eat very spicy food, you can remove the chilli seeds or slightly increase the quantity of peanuts. It not only enhances the taste, but the chilli and garlic present in it also help in speeding up the metabolism.
