Cucumber Recipe: The scorching heat has set in and in such weather, keeping the body cool internally is the biggest challenge. Even a little carelessness in eating habits can increase stomach problems. Cucumber is often eaten as a salad in summer as it is rich in water and hydrating. But if you are bored of eating cucumber in the same way every day, then famous celebrity chef and MasterChef India judge Kunal Kapoor has brought a wonderful recipe for you. He has presented cucumber in the form of cucumber vegetable in a unique and delicious style.

Chef Kunal Kapoor recently shared the recipe of this traditional Marwari style cucumber curry on his Instagram. According to him, if you have always eaten cucumber only in salad, then this vegetable can be a pleasant surprise for you. This dish is not only light on the stomach but is also wonderful in taste. The chef explains that this Marwari style curry is extremely comforting and full of nutrition, making it an ideal choice for a summer afternoon.

Material

To make this recipe, you will need the following ingredients which are easily available in your kitchen.

  • Cucumbers (medium size): 4
  • Mustard oil: 4 tbsp
  • Dry red chilli: 2 to 3
  • Asafoetida: 1½ tsp
  • Mustard seeds and cumin: 1 tsp each
  • Fennel and curry leaves: 1 tsp and a sprig
  • Finely chopped ginger, garlic and green chillies
  • Curd mixture: 1 cup curd, 1 teaspoon gram flour and basic spices (turmeric, chilli, coriander powder, kasoori methi).

Method of preparation

First of all, cut the cucumber into pieces, taking care not to remove its peel. Heat mustard oil in a pan and add dry red chilli, asafoetida, mustard, cumin, fennel, curry leaves, ginger-garlic and onion and fry until the onion becomes soft. After this, add chopped cucumber and salt to it and let it cook for 5-6 minutes.

In a separate bowl, mix curd, gram flour and all the spices and prepare a smooth mixture. Lower the gas flame and pour this curd mixture into the pan. Mix it well and cover and cook on low flame for 5-7 minutes. Your creamy and delicious cucumber curry is ready which you can serve hot.

Cucumber is not only a good source of water but also contains plenty of fiber and nutrients. It is very light for the digestive system and is also considered better for heart health.
