Sugar Free Sandesh

Material

  • 1 liter milk
  • 4 cups cheese
  • 2 teaspoons lemon juice
  • 2 cups sugar-free sweetener (e.g., stevia, erythritol, monk fruit sweetener)
  • 2 teaspoon cardamom powder
  • 8- 10 saffron threads
  • ½ cup finely chopped cashews
  • ½ cup finely chopped almonds
  • half cup finely chopped pistachios

method of making

  • To make Sandesh, first boil 1 liter milk in a pan on gas.
  • When the milk boils, add lemon juice to it and curdle the milk.
  • Now turn off the gas. Filter the chhena with the help of a strainer.
  • Then tie it in a muslin cloth and hang it at a high place.
  • Next day, when the Chhena’s water drains out, take it out in a plate.
  • Then crush it well with the help of both hands.
  • Now add 4 cups of grated cheese to it.
  • After this, put this mixture in a food processor and grind it until it becomes smooth.
  • Now heat a pan on the gas. Then add ground chhena and cook well for 5-7 minutes.
  • When chhena starts leaving the pan, turn off the gas.
  • Then add sugar-free sweetener, cardamom powder and saffron threads and mix well.
  • Now put this mixture again on the gas and cook it again for 5-7 minutes.
  • When everything is mixed well, turn off the gas.
  • Now take out this mixture in a plate and let it cool.
  • After it cools down, make it a round shape.
  • Then keep it in the refrigerator for 2 hours. Sugar free message is ready.
