Raw Mango Curry: Prepare Maharashtra’s traditional raw mango curry at home, guests will keep licking their fingers.

During summers in Maharashtra, ‘Ambe Chi Kadhi’ i.e. raw mango curry is prepared and eaten with great gusto. This dish is not only sweet and sour in taste, but also cools the stomach in the summer season. If you want to try something new and traditional this weekend, then this recipe is perfect for you. Ingredients required to make Mango Curry

Raw mango (grated or pulp): 2 medium sized

Gram flour: 3 tbsp

Coconut Milk or Fresh Grated Coconut: 1 cup

Jaggery: As per taste (to balance the sourness)

Green chilly: 2-3 (chopped)

Ginger-Garlic Paste: 1 tbsp

For tempering: Mustard, cumin, asafoetida, curry leaves and dry red chilli

Spices: Turmeric, salt and finely chopped coriander

Recipe: Step-by-Step

Cook the mango: First of all, peel the raw mango, cut it into pieces and boil it by adding some water. When the mangoes become soft, mash them and prepare pulp.

Prepare the solution: Mix gram flour and some water in a vessel and make a smooth batter. Now add mango pulp and coconut milk (or ground coconut) to it. Keep in mind that there should be no lumps in the solution.

Cook: Keep this mixture to heat on medium flame. Add turmeric, salt, ginger-garlic paste and jaggery to it. Cook it on low flame until the curry becomes slightly thick.

Add tempering: Heat oil or ghee in a small pan. Add mustard, cumin, asafoetida, dry red chilli and curry leaves and crackle. Pour this hot tempering over the prepared curry.

Garnishing: Garnish with fresh coriander and serve it with plain rice or chapati.
