Ingredients needed to make chutney

Seed: 2 tbsp flax seeds, 2 tbsp white sesame seeds, 1 tbsp black sesame seeds, 3 tbsp desiccated coconut

Spices: 12-14 fenugreek seeds, a pinch of asafoetida, 2 teaspoons coriander, 3-5 dry red chillies, 1 cup fresh curry leaves

Other things: 2 spoons peanut oil, salt as per taste, some mango powder, light sugar and 3-4 garlic cloves.

1. Roasting the seeds: First of all, fry flaxseeds in a pan on low flame, until it starts crackling slightly. Take it out and keep it aside. Then in the same pan, roast sesame and niger seeds until they become light golden.

2. Preparation of coconut and spices: Now fry the dry coconut until it turns light brown. After this, add peanut oil in the pan and add fenugreek seeds, asafoetida and coriander and fry. Then add dry red chilli and curry leaves and cook until they become crisp.

3. Grinding Process: When everything cools down, first grind the seeds and coconut coarsely. After this add spices, salt and mango powder and grind them together. If you are adding garlic, balance other spices according to taste.

Keep the prepared chutney in an airtight container. You can use it comfortably for about three weeks. It remains fresh for a long time and adds flavor to every meal.
