It is a “ready-to-cook” powder that you can prepare at home, store for months and prepare fresh dal in minutes by simply adding hot water when needed.
Ingredients required for dal premix
Pulses: 1 cup pigeon pea (tur) dal, ½ cup moong dal, ½ cup masoor dal.
For tempering: 2 tbsp oil or ghee, 1 tsp cumin, 1 tsp mustard (rai), ¼ tsp asafoetida.
Spices: 1 teaspoon turmeric, 1.5 teaspoon red chili powder, 2 teaspoon coriander powder, 1 teaspoon garam masala, salt as per taste.
Other: Dried curry leaves, 2-3 dry red chillies, 1 tsp Kasuri methi, 1 tsp dry mango powder (for sourness).
Method of preparation (Step-by-Step Recipe)
Roast the pulses: First of all, wipe all three pulses with a clean cloth. Now dry roast them in a pan on low flame until a pleasant aroma starts coming from them and the color changes slightly.
Prepare the powder: Let the roasted pulses cool completely. After cooling, put them in a mixer and make a coarse or fine powder (as per your choice).
Add tempering: Heat oil in a pan. Add mustard seeds, cumin seeds, asafoetida, dry red chilli and curry leaves. When the spices start crackling, reduce the flame.
Mix spices and pulses: Now add prepared lentil powder in the tempering. Also add turmeric, chilli, coriander powder, garam masala, dry mango powder and salt and fry for 2-3 minutes. Finally add Kasoori Methi and turn off the gas.
Store: Let this mixture cool completely. After it cools down, store it in an airtight container or zip-lock bag. this mixture 3 to 6 months Doesn’t get spoiled till.
Method of preparing pulses (How to Use)

Microwave Method: Take 2-3 teaspoons of premix in a bowl, add 1 cup hot water and microwave for 4-5 minutes.
Without stove method: Take out the premix in a thermos or bowl, add boiling hot water, cover with a lid and leave for 10-15 minutes. Your hot dal is ready!

Protect from moisture: It is very important to roast the pulses, because the premix can spoil quickly if there is moisture.
Vegetable Twist: If you want, you can also add dry onion powder or dry garlic powder to it.
