Material:
Ripe tomatoes: 4-5 medium sized
Pumpkin: 250 grams
Onion: 1 medium size
Garlic: 3-4 cloves
Ginger: 1 inch piece
Green chilli: 1
Butter/Oil: 1 tbsp
Bay leaf: 1
Cinnamon: 1 small piece
Black pepper: 4-5 whole
Salt: as per taste
Sugar: 1 tsp
Water/vegetable broth: 3-4 cups
Fresh cream/coriander leaves: to garnish
Method:
Roasting Vegetables:
Heat butter or oil in a deep pan. Add bay leaves, cinnamon and black pepper and fry for a few seconds. Now add chopped onion, garlic, ginger and green chilli and fry until golden.Now add chopped tomatoes and pumpkin pieces to it. Mix well and fry for 2-3 minutes until the tomatoes become slightly soft.

Cooking by adding water:
Add 3-4 cups of water or vegetable broth into the pan. Add salt and sugar and mix well. Bring to a boil, then reduce heat to low, cover with a lid and cook until the vegetables are soft, about 15-20 minutes.

Cooling and grinding the mixture:
When the vegetables are cooked well, turn off the flame and let the pan cool down a bit. Remove the bay leaf and cinnamon stick. You can grind the cinnamon if you want, but it is better to extract the bay leaf.

Filtering and Reheating:
Strain the ground mixture through a fine strainer to remove any fibers or seeds and give you a smooth broth. Now pour the strained broth back into the pan and heat again on low flame for 5-7 minutes, so that the flavors deepen. If the broth seems too thick, you can add some water.

Serving:
Transfer the hot tomato pumpkin broth to a serving bowl. Garnish with fresh cream or coriander leaves and serve with hot bread croutons or toast.
