Raw Mango Loungi
First Step- To make Raw Mango Launji, you have to take 3-4 raw mangoes. Wash the mango thoroughly and peel it. Now cut the mango into thick pieces. Take out the kernels and do not throw them away but add them to the vegetable.
Second step- For launji, add mustard oil in the pan. You have to use very little oil. Now add green fennel in oil and add turmeric, salt and red chili powder. Now add chopped raw mango and its seeds into it. Mix everything and add 1 glass of water.
Third Step- Now cook the mangoes until they melt well. When the mango is ripe, add black salt and black pepper powder to enhance its taste. Now add jaggery, jaggery powder or sugar to sweeten it. You can keep it more or less sweet as per your taste. If there is less water in the launji, add some more.
Fourth step- Make mango launji into light paste. Don’t use too much water or make it too thick. In this way delicious mango launji will be ready. You eat it with roti and rice. Mango launji can be eaten well by keeping it in the refrigerator for 8-10 days.
