  • 1 large brinjal
  • 1 onion (finely chopped)
  • 2 tomatoes (chopped)
  • 2-3 green chillies
  • 1 tsp ginger-garlic paste
  • 1/2 tsp turmeric
  • 1 tsp red chilli powder
  • 1 tsp coriander powder
  • salt as per taste
  • 2 tbsp mustard oil
  • Coriander to garnish

How to make Baingan Bharta

To make flavourful brinjal bharta, first wash the brinjal, place it directly on the gas and fry it well from all sides. When its peel turns black and becomes soft from inside, cool it and remove the peel. Now mash the brinjal.

Heat mustard oil in a pan. Add finely chopped onion to it and fry until it turns golden. Now add ginger-garlic paste and green chillies and cook till aroma comes. After this add chopped tomatoes and let the masala cook well.

Now add turmeric, red chilli and coriander powder to the prepared spices and mix. After this add mashed brinjal and mix well. Cook on low flame for 3-4 minutes, so that all the flavors mix well.

Finally, check the salt and garnish with green coriander. Serve hot brinjal bharta with roti, paratha or bajra roti. Brinjal contains fiber and antioxidants, which are beneficial for digestion.
