Things needed to make Jaggery Ambi

  • 2 medium sized raw mangoes
  • 1 cup jaggery
  • 1 tsp fennel
  • 1/4 tsp turmeric
  • salt as per taste
  • 1/2 tsp mustard
  • 1/2 tsp red chilli powder
  • 1 tsp black salt
  • 2 tbsp oil
  • 1/2 tsp fenugreek seeds

How to prepare Jaggery Ambi?

  • First of all, wash the raw mango thoroughly and cut it into small pieces. If you want, you can remove the peel, but leaving the peel intact makes it taste better.
  • Now heat oil in a pan. Add mustard seeds and fenugreek seeds in it.
  • When the spices start crackling, add fennel. After this, add chopped mangoes and cook lightly for 3-4 minutes.
  • Now add turmeric, salt, black salt and red chilli to it.
  • After stirring for a while, add jaggery. Jaggery will slowly melt and will mix with mango to form a thick mixture.
  • Cook it on low flame until the mangoes become soft and the spices stick well. Let the prepared jaggery ambi cool down.
