Material

  • Kalingad – 3 cups (seeds removed and cut into small pieces)
  • Milk – 1 liter
  • Sugar – 1/2 cup (as per taste)
  • Ghee – 2 tbsp
  • Corn flour – 2 tbsp
  • Cardamom powder – 1/2 tsp
  • Pistachios and almonds

  • To prepare kalingada ice cream, first of all, cut kalingada into fine pieces and put it in a mixer bowl.
  • Separate the kalingada seeds beforehand. Prepare Kalingada puree in a mixer.
  • After this, strain the puree in a tea strainer to separate the pulp.
  • After this, heat the milk in a large pan. Keep stirring the milk over medium heat until it thickens and reduces by half.
  • After that add sugar and cardamom powder and mix everything well with a spoon.
  • Now take half a spoon of cornflour in a small bowl and add water to it to make a good slurry.
  • Add this cornflower water to the milk mixture and mix, this will help thicken the mixture.
  • Now add 2-3 teaspoons of ghee and mix all the ingredients well and cook for few minutes, switch off the flame.
  • Now add ghee in a plate and spread it well, then pour the prepared mixture on the plate and spread it evenly.
  • Allow the mixture to cool down in the plate for sometime and cut the barfi into the desired shape with the help of a knife.
  • You can garnish the barfi with pistachios and almond pieces on it.
