  • Curd (1 cup)
  • Ginger-garlic paste (2 tbsp)
  • Red chilli powder (1 tsp)
  • Turmeric (1/2 tsp)
  • Garam masala (1 tsp)
  • Black pepper powder (1/2 tsp)
  • Lemon juice (1 tbsp)
  • salt as per taste
  • Mustard oil or ghee (3 tbsp)

Marination process

The real taste of mutton chaap lies in its marination. Prepare a thick mixture by mixing curd, ginger-garlic paste, all the spices and lemon juice in a large bowl. Now add mutton chaap to it, coat it well and keep it in the fridge for at least 4-5 hours. If you have time, marinating it overnight gives even better taste.

Heat ghee in a pan or kadhai and cook the marinated mutton chaap on low flame. Keep turning it occasionally so that the spices get absorbed properly. Cooking with a lid makes the mutton soft and juicy. When the mutton is cooked well and turns light golden, turn off the gas.
