Ingredients required to make oil-free stuffed bitter gourd: To prepare this special and healthy dish, you will need some simple ingredients present in your kitchen: 6 to 8 fresh bitter gourds 2 large onions (finely chopped) 1 tablespoon coriander powder 1 teaspoon turmeric powder 1 teaspoon red chili powder 1 teaspoon dry mango powder (for sourness) 1 teaspoon fennel (coarsely ground) Finely chopped coriander Salt as per taste The easiest step-by-step method of making stuffed bitter gourd Prepare the bitter gourd like this: First of all wash the bitter gourd thoroughly with clean water. After this, peel the bitter gourd lightly from the top and make a long incision in the middle and take out all the seeds present inside it. Now apply a little salt on the top and inside of the bitter gourd and leave it for about 15-20 minutes. By doing this, all the bitterness of bitter gourd is easily removed. Make spicy filling masala: In a mixing bowl, add finely chopped onion, coriander powder, turmeric, red chilli, dry mango powder, fennel and salt as per taste and mix well with a spoon. Even without oil, onion releases its water, due to which the spices bind together well. Make the spice stuffing: Now wash the salted bitter gourds by squeezing them gently once. After this, fill this spicy mixture of onion and spices prepared inside all the bitter gourds by pressing them well. If you are afraid that the masala will come out, you can tie the bitter gourd lightly with the help of a clean thread. Secret way to cook without oil: Now place a thick-bottomed pan or non-stick pan on the gas. Place the filled bitter gourds in it neatly without adding oil. After this, just sprinkle a little water (about two to three spoons) on top and cover the pan with a lid and reduce the flame to very low.
