These days, the entire internet seems to be ablaze with Taylor Swift news. There’s excitement about the pop star’s new song for Toy Story 5 and even some speculation about the location of her upcoming wedding. But if we’re being honest, we’re way more interested in what Swift is cooking these days. From sourdough bread to her go-to meatball recipe, we know “All Too Well” that the pop icon’s kitchen prowess is just as enviable as her musical abilities.
On a recent episode of the Dish from Waitrose podcast, singer-songwriter Marcus Mumford shared a simple, veggie-packed salad he made for Swift. Turns out, it’s one that she absolutely loves—and it’s a dish the Mumford & Sons singer is apparently well known for making.
“One of your accolades that I really want to talk to you about: We’ve heard that you make a phenomenal cauliflower salad,” says Dish host Nick Grimshaw.

While Mumford insists that calling the salad phenomenal is “quite strong” as a description, he was happy to share the delicious details with listeners. “It’s pretty good,” he admits. “We’ve got it pretty dialed in at this point. It’s roasted—but pretty much burnt—cauliflower. And then pine nuts and feta on a spinach bed. Oh, and avocado.”
As for the salad dressing for this culinary delight, Mumford keeps things fairly simple with a classic combination of balsamic vinegar and olive oil.
When Swift was recording songs in Mumford’s personal studio back in 2020, Mumford says he got into the habit of making the dish pretty regularly. “We ate it almost every night… and then she has since taken it away—calls it the ‘Mumford Salad’—and was quite keen on it,” he shares.
Of note, while Mumford’s balsamic-and-oil dressing sounds pretty simple, he does have one very important rule. “The balsamic has to be quite syrupy,” he said. “I can’t do this watered down stuff. It’s gotta be really sweet.”
Roger that. To make the Swift-approved “Mumford Salad,” roast (almost to burning) some cauliflower, then toss it with feta cheese and pine nuts and pour the mixture over a bed of leafy green spinach. Top the salad with fresh slices of avocado and dress it with your favorite aged balsamic vinegar and a drizzle of good olive oil.
Mumford’s “phenomenal” salad sounds pretty perfect for summer. And since the dish isn’t too hard to make, you could pair it with your favorite main dish in a jiffy. It might even make a fun side option for your next barbecue.
