Dal Tadka Recipe: Dal is a staple of Indian cuisine, making even a simple meal delicious and filling. But when it comes to dhaba-style dal tadka, it’s a truly unique experience. The piping hot tadka, the aroma of ghee, the scent of garlic, and the flavor of the spices make the dal so delicious that you won’t be tempted to settle for just plain rice or roti.

If you’re having guests over and want to make something that tastes like the ones at a restaurant or a dhaba, dal tadka is a great option. It doesn’t require much effort or expensive ingredients. You just need to know how to cook the dal properly and add the tadka. Let’s learn an easy recipe for making dhaba-style dal tadka at home.

Ingredients for making Dal Tadka

  • 1 cup pigeon pea (arhar dal)
  • 2 cups water or as needed
  • 1 small tomato finely chopped
  • 1 small onion finely chopped
  • 2 green chillies
  • 1/2 teaspoon turmeric
  • 1 teaspoon red chili powder
  • Salt to taste
  • 1 teaspoon coriander powder
  • Coriander leaves for garnish

For the tempering

  • 1-2 tbsp ghee
  • 1/2 tsp cumin seeds
  • 1 pinch of asafoetida
  • 4-5 garlic cloves, finely chopped
  • 1-2 dry red chillies
  • 1/2 teaspoon red chili powder
  • A little Kasuri Methi

How to make Dhaba Style Dal Tadka

Cook the lentils thoroughly.
First, rinse the pigeon pea lentils 2-3 times with clean water. Place them in a pressure cooker, add turmeric, salt, and water. Cook over medium heat for 3-4 whistles. After the pressure is released, whisk the lentils thoroughly to achieve a smooth and slightly creamy texture.

If the dal seems too thick, a little hot water can be added. The specialty of dhaba dal is that it’s neither too thin nor too thick.

Prepare the spice base:
Heat some ghee or oil in a pan. Add cumin seeds and asafoetida. When the cumin seeds begin to crackle, add finely chopped onions and green chilies and sauté. When the onions turn light golden, add the tomatoes.

Now add turmeric, coriander powder, and a little red chili powder and cook the spices thoroughly. When the tomatoes soften and begin to separate the oil from the spices, add the prepared lentils.

Now comes the authentic dhaba-style tadka.
Let the lentils cook over low heat for 3-4 minutes. Meanwhile, heat the ghee in a small tadka pan. Add the cumin seeds, asafoetida, chopped garlic, and dried red chilies. Fry the garlic until lightly golden.

After turning off the heat, add a little red chili powder and dried fenugreek leaves. Immediately pour this tempering over the hot lentils. The aroma that wafts from the tempering will transform the entire taste of the lentils.

How to serve:
Garnish the prepared dal tadka with coriander leaves. It can be served with hot jeera rice, plain rice, tandoori roti, naan, or parathas. Drizzling a little ghee over the dal just before serving enhances its flavor and aroma.

Trick to get Dhaba like taste

It’s crucial to stir the lentils thoroughly and add a separate garlic-cumin tempering at the end. Using ghee in the tempering adds a richer flavor. Avoid burning the garlic too much, or the lentils may taste bitter. Also, cover the lentils immediately after adding the tempering; this helps retain the aroma.
