Boil the mung beans lightly. Wash and drain the water. Boil cumin seeds in a little mustard oil in a pan and add onions and green chillies. Stir in the vegetables, salt and turmeric. When the vegetables are half cooked, mix in the cooked pulses and chives. Cover for few minutes and serve hot.

3. Cheese-vegetable grater
Ingredients:

1 cup of chickpeas, 50-60 grams of cheese, 1 cup of carrots, capsicum and peas, 1 onion, green chillies, ginger, mustard oil, salt and turmeric.

Wash and drain the water. Fry onion, ginger and green chillies in mustard oil and add vegetables. Season with salt and turmeric and let the vegetables cook until soft. Stir in the shredded cheese for a minute and mix. Cover and cook for 2-3 minutes.

4. Chickpea-chirn chaat
Ingredients:

1 cup chickpeas, 1/2 cup boiled chickpeas, 1/2 cup cucumber, 1/2 tomato, 1 onion, coriander leaves, green chillies, lemon juice, roasted cumin powder and salt.

Wash and drain well. Mix boiled gram, cucumber, tomato, onion and coriander leaves with it. Mix well with lemon juice, roasted cumin powder and salt. This fiber-rich chaat will be loved by everyone, young and old.

5. Chir Tikka
Ingredients:

1 cup chickpeas, 1 small boiled potato, grated carrot, peas (half a cup in total), 2 tbsp chopped onion, 1 tbsp chopped coriander leaves, 1 chopped green chilli, half tsp roasted cumin powder, pepper powder, salt and oil.

Wash the chives well and drain the excess water. Mix boiled potato chips, carrot, beans, onion, coriander leaves and green chillies with it. Mix well with roasted cumin powder, pepper and salt.

Make small balls or flat tikkas from the mixture. Heat a little oil in a non-stick pan and fry on medium heat until golden and crispy on both sides. The addition of vegetables to the chickpeas makes this tikka rich in fiber as well as nutrients.
