This pada originated from the cuisine of the Halba Koshti and Savji weavers who came to Nagpur from Madhya Pradesh in the 19th century. Later, when the textile mills started closing down, their traditional livelihood also gradually disappeared. At that time, cooking became the new livelihood. They opened small roadside eateries and started serving their homemade, spicy food. From there, the popularity of Saoji Mutton spread.

• 4 dry chillies
• 5 Kashmiri dry chillies
• 4 tbsp coriander powder
• 2 bay leaves
• 1 Tablespoon of Shahjeer
• 2 pieces of cinnamon
• 1 nutmeg
• 1 star anise
• 3 large cardamoms
• 4 small cardamoms
• 1 tablespoon fennel
• One and a half teaspoons of poppy seeds
• Whole pepper
• 10-12 cloves
• 1 tablespoon roasted chickpeas
• 1 tablespoon of rice
• 1 cup grated coconut
• 5 onions, thinly sliced
For the gravy you will need—
• 1 tablespoon of chilli powder
• Half a teaspoon of turmeric powder
• Salt to taste
• 6 tbsp oil
• Two and a half tablespoons of ginger-garlic paste

How to make?
First dry roast all the saoji masala ingredients. When the aroma comes out from the masala, cool it down.
Now fry the onion with oil in a pan and make the beresta. Sauji masala is made by blending fried spices and onions together.
Now heat oil in a pressure cooker and fry the khasi meat pieces well. Keep grinding the meat with ginger-garlic paste, turmeric, salt and chilli powder. When the water comes out of the meat, when it is almost dry, mix the saoji masala well and saute it for a while.
After few minutes pour hot water and let it boil. Then close the lid of the pressure cooker and cook for 4 cts. Leave it for a while and then open the lid. Serve Sauji Mutton piping hot with steamed white rice. This recipe is quite complicated. So if you plan to make it, collect all the ingredients in advance.
