Essential ingredients for Moringa Paratha

  • 1 cup wheat flour
  • 1/4 cup gram flour
  • 1 cup fresh moringa leaves
  • salt as per taste
  • some turmeric
  • chilli powder
  • Celery
  • crushed green chillies
  • a little ginger
  • 1 teaspoon ghee or oil
  • Ghee or oil as required for baking paratha

First prepare Moringa leaves

Separate the leaves from the moringa branches. After this, wash them thoroughly with clean water, so that the dust and soil stuck on the leaves is removed. If you want, you can chop the leaves finely or add them directly to the flour.

Knead paratha dough like this

Take wheat flour and gram flour in a big vessel. Add salt, turmeric, red chili powder, celery, crushed green chilies and some ginger to it.

Now add cleaned Moringa leaves and one spoon ghee to it and mix everything well. After this, knead a soft and normal dough by adding water little by little.

Give crispy and flaky texture to paratha like this

Make small balls of the kneaded dough. Dip a ball in dry flour and roll it out. Now apply light ghee on it and fold it in a triangular or square shape. After this, roll it lightly again.

With this method the paratha can become more flaky and crispy.

Bake it on the pan like this

Heat the pan on medium flame and put the rolled paratha on it. When one side gets lightly cooked, turn it. Apply ghee or oil as per requirement on both the sides and bake the paratha till it becomes golden and crispy.

Hot Moringa Paratha can be served with curd, pickle or your favorite chutney.
