How to make – step by step

Now the most important thing – the dough

Take a pan, add 2 cups of water and a pinch of salt. When the water boils, add the rice flour. Turn the heat to fine and keep stirring continuously for a minute. Now cover it and let it cook on low flame for 2-3 minutes. Sprinkle some water again and cover again and cook for 2-3 minutes. Do this two or three times. Now take out this dough in a big paratha. Knead it well with your hands while still slightly warm. The dough should be very soft and elastic. This is the real trick. Once the dough is kneaded, cover it with a wet cloth for half an hour. That means the dough will rise well.

How to shape modaka?

After half an hour make small balls of the dough. Apply some oil or ghee on your hands. Now take a ball and make a small bowl of it on your hand. Keep the edges thin and the middle slightly thicker. Now fill the prepared saran in it. Now the most important thing is to pluck the buds. Gently pinch the buds with thumb and finger and bring them together at the top to close. Do not press too hard or the modak will break. Work gently.

Steam it

Heat water in a steamer or a pot. Apply a little ghee to the sieve on which the modaks will be placed so that the modaks do not stick. Keep all modak and steam for 10 to 12 minutes.
