If you want to make something for breakfast which is tasty as well as nutritious, then Moong Dal-Paneer Dosa can be a great option. The special thing is that to make it, there is no need to ferment the batter for hours like traditional dosa. Prepared from green moong dal, peanuts, cheese and fresh vegetables, this dosa is crispy from outside and delicious from inside. Adding green coriander and green chillies to it gives beautiful green color and freshness to the batter. It can be easily included in children's tiffin to adults' breakfast.

First prepare moong dal batter

For this dosa, first soak green moong dal and peanuts thoroughly. Drain the water from the soaked ingredients and put them in a mixer jar.

Now add about 3-4 garlic cloves, 3-4 green chillies, 1 cup fresh green coriander, salt as per taste and about half a cup of water.

Grind everything well and prepare a smooth and thick batter. Keep the batter neither too thin nor too thick. Green coriander gives it natural green color and fresh taste.

Prepare cheese and vegetable stuffing

Now prepare the stuffing to fill inside the dosa. For this, finely chop carrot, capsicum, onion and green chilli.

Put all the chopped vegetables in a bowl and add about 100 grams of grated fresh cheese to it. Add some salt as per taste and mix everything well.

If desired, light spices can also be added to enhance the taste.

Now spread the dosa on the pan

To make Dosa, place the pan on gas and heat it well on medium flame. Apply some oil on the pan with the help of a brush.

Now put a big ladle of batter in the middle of the pan and spread it thinly by rotating it in a circular motion. Add some oil or ghee on the edges of the dosa.

Keep in mind that while spreading the batter, the pan should not be too hot, otherwise the dosa will not spread easily.

Add cheese-vegetable stuffing

When the dosa starts getting lightly cooked from below and the batter on top starts drying, then spread the prepared cheese and vegetable stuffing evenly over the dosa.

Now let it cook on low to medium flame for about 2-3 minutes. With this, the lower part of the dosa will become nicely crispy and golden, while the stuffing will also be lightly cooked.

Make it absolutely crispy like this

When the edges of the dosa start separating easily from the pan and a golden color starts appearing from below, then roll it carefully with the help of a spatula.

After this, you can cut the dosa into 2-3 parts with a pizza cutter or knife.

Serve with chutney

Now your hot Moong Dal-Paneer Dosa is ready. Serve it with coconut chutney, green coriander-mint chutney or tomato chutney.

Apart from being different in taste, this breakfast also provides protein due to moong dal and paneer. Vegetables add fiber and different nutrients.
