Easy method of making Kathiawadi Dahi Tikhaari

First prepare curd

Take 400 grams curd in a big bowl and beat it well. Add finely chopped green coriander to it. Keep the curd aside. Keep in mind that the curd is fresh and there are no lumps in it, so that the finished dish has a good texture.

Make Garlic and Chilli Masala

Now take garlic cloves and green chillies. Put them in a mortar and pestle and grind them coarsely. Add Kashmiri red chilli powder, coriander powder, turmeric and some salt to it. Prepare the masala by grinding everything well. You can increase or decrease the quantity of garlic and green chilli as per your taste.

Fry onions and spices

Heat some oil in a pan. Add cumin seeds, mustard seeds and asafoetida and let it crackle. Now add finely chopped onion and fry it until it turns light pink. Keep stirring the onion continuously, so that it does not burn and the flavor of the spices emerges well.

Cook the prepared spices

Now add the prepared masala of garlic and green chillies in the pan. Mix it well with onion. Add some water as required and cook for 2 to 3 minutes. When the masala is cooked well and the oil starts separating, turn off the gas.

Mix spices in curd

Now let the prepared masala cool down a bit. After this, mix it slowly in whipped curd. Add half teaspoon chaat masala to it and stir well. Keep in mind that adding very hot spices directly to the curd may change its texture. If it is necessary to heat the curd, heat it on low flame while stirring continuously and turn off the gas before it comes to a boil.
