How to make Dal Kachori
To make Dal Kachori, first put flour in a big bowl. Add a little salt and 3 tablespoons ghee to it and mix it well. Now start adding water little by little and knead the dough. Keep in mind that the dough should be kneaded softly. After this, apply oil on the dough, cover it with a cloth and keep it aside for 30 minutes. Before this, soak moong dal in a bowl and keep it for two hours.
After the stipulated time, take moong dal and put it in a mixer jar, grind it and prepare a thick paste. Now take out this paste in a vessel and keep it aside. Take a pan and add 1 teaspoon ghee in it and heat it on medium flame. When the ghee melts, add fennel, cumin and a pinch of asafoetida and fry. When the aroma of spices starts coming, add turmeric, red chilli, coriander powder, dried mango powder, garam masala and other spices and salt as per taste.
When the spices are fried well, add gram flour to it and fry it on low flame while stirring with a ladle. After this, add the previously prepared moong dal paste to this mixture and sauté for 5 minutes. In this way the stuffing for Kachori is ready.
Now take all purpose flour and make a ball out of it. Take a dough and make it like a round ball. Then press it with your thumb to deepen it and place the prepared stuffing of moong dal in it. After this, close the stuffing and take out the extra dough and make a round ball. Then place it between the palms and press it. Similarly, prepare all the spice kachoris.
Now put oil in a pan and heat it. When the oil becomes hot, reduce the flame, add the kachoris and fry them. Fry the kachoris until they turn golden on both sides. It will take 10-15 minutes to fry it properly. After this, take it out in a plate. Your flavourful Dal Kachori is ready.
