How to make milk feni
– First of all, separate 10-12 almonds and 10-12 cashews and soak them overnight in a quarter cup of water. Also, soak 12-15 threads of saffron in one tablespoon of milk and keep it in the refrigerator. This will add color and aroma of saffron to the milk.
– Take out the soaked almonds from water and peel them. This will make the almond paste more soft and its flavor will also get absorbed into the milk.
– Make a fine paste by adding peeled almonds, soaked cashews and some water. Keep in mind that there should not be large pieces of dry fruits in the paste, so that the milk has a good texture.
– Pour 2 cups of full cream milk in a pan and add 2 tablespoons of milk powder and saffron to it. Keep it to boil on medium flame. Keep stirring occasionally so that the milk does not stick to the bottom.
When the milk boils, add dry fruits paste to it. Cook it on medium flame for 10-12 minutes and keep stirring in between. Then add one teaspoon cardamom powder, 5-6 chopped almonds and 5-6 chopped pistachios. After cooking for one more minute, turn off the gas.
– Arrange dry feni in a plate and add hot milk to it. Let the feni remain like this for about 5 minutes so that it becomes soft in the milk.
– Finally, add chopped almonds, pistachios and dry rose petals over the milk feni. Serve it hot. If you like it cold, you can eat it cold also.
things to note
– Do not leave feni in milk for too long, because if kept for too long it becomes extremely soft.
– Always use full cream milk, which makes the milk taste even creamier and richer.
– Keep stirring the milk continuously so that it does not stick to the bottom.
