method of preparation
First of all, take a normal dough and make it a little bigger and round like chapatti. Then, using a knife, make only one straight cut from the center of the rotli to the edges. With this one cut the roti is divided into 4 parts. After making cuts, spread the stuffing on all four parts of the roti. Put prepared potato mixture in the first part, spread some ghee, sweet and basic spices in the second part, put shredded cheese in the third part and put pickled onion and green chilli in the fourth part. Then, starting from the cut side, wrap and fold the four pieces one by one upwards in a triangular shape evenly.
Apply some nigella and coriander seeds on the upper part of the folded triangular paratha and roll it gently. Now heat the pan and roast the paratha on medium flame from both the sides. Apply some desi ghee and cook for 4 to 5 minutes till it becomes lightly golden and crispy on both the sides. Once the parathas are properly roasted, take them out in a plate. Serve this hot multi-layer 4-in-1 Paratha with Bundina Raita and spicy-sweet tomato chutney. Apart from being healthy, these parathas also fill the stomach!
