A quick and nutritious recipe

Material:

– Slices of bread (brown or white): 4

– Boiled potatoes: 2 medium sized

– Butter: 2 spoons

– Mayonnaise or cheese spread: 2 teaspoons

– Cucumber: 1 (cut into thin slices)

– Tomato: 1 (cut into thin slices)

– Carrot: 1 (grated)

– Green chilli (optional): 1 finely chopped

– Salt: as per taste

– Black pepper powder: 1/2 teaspoon

– Coriander leaves: 1 teaspoon (finely chopped)

– Chaat masala: 1/2 tsp (optional)

Method:

1. Prepare the potato mixture: First, mash the boiled potatoes well. Add green chilli, black pepper powder, coriander leaves and salt to it. If children like spicy food then they can also add a little chaat masala to it.

2. Prepare the bread: Spread butter and mayonnaise or cheese spread on both slices of bread.

3. Arrange vegetables: Place grated carrots, cucumber and thin slices of tomato on a platter. Sprinkle some salt and pepper on top.

4. Add potato mixture: Now spread the prepared potato mixture on it. Cover it with another bread slice.

5. Grill the sandwich or grill it: If you have a sandwich maker, grill the sandwich in it. If not, then add butter on the pan and cook the sandwich from both the sides until it becomes golden and crisp.

6. Cut and serve: Cut the sandwich diagonally or into squares and serve it to children. Serve it with ketchup or green chutney to make it more delicious for kids.

Tips:

– If your child likes cheese, you can also add cheese slices or grated cheese to the sandwich.

– To make it more nutritious, you can also add other vegetables like spinach, capsicum or beans to it.

It would be better to use brown bread or multigrain bread instead of white bread, which will make the sandwich even healthier.
